To create The Balvenie PortWood 21 year old single malt whisky, a marriage of rare Balvenie is transferred to port casks, or pipes, which have held fine port wines. Here it is sampled regularly by The Balvenie Malt Master David C. Stewart MBE to ensure that just the right amount of character is imparted by the port casks, enhancing and developing the single malt whilst preserving its original characteristics.

Under the watchful eye of The Dalmore's Master Distiller, this Highland single malt begins its maturation in American white oak ex-Bourbon casks, developing the distillery's signature notes of chocolate, orange and spice. It is then finished in casks that held a bespoke Sherry blend of aged Oloroso and rich Pedro Ximénez, crafted specifically to complement the house style. Every November, the Dalmore whisky makers visit the distilleries historic sandstone warehouses to explore the ageing casks. In the chill shadows, the casks are meticulously assessed and only a handful with distinguishing attributes are hand selected from any one year. The matured Spirit from these casks is then masterfully married to create on harmonious vintage- a rare whisky that reveals the soul of that single year at the Dalmore.
